With the closure of my favorite restaurants during the shut-down, I was inspired to cook even more than usual. Cooking is one of my favorite pastimes, especially Asian & Mexican inspired foods.
As a vegetarian for 39 years, these types of cuisines offer so many options. From vegetable noodle stir-fries to crispy cauliflower tacos here are some of my favorites. I also enjoy pickling vegetables. I am looking forward to hitting the farmer’s markets as soon as they open!
